Thai Dipping Sauce

In a small pan, combine 1/2 cup (125g) sugar,
1/2 cup (125ml) water,
1/4 cup (60ml) white vinegar
1 tablespoon fish sauce
1 small finely chopped red chilli.(Sambal Oelek is ok)

Bring to the boil and simmer uncovered until starting to thicken.
Stir in 1/4 small peeled, seeded and finely chopped cucumber, and.
1 tablespoon chopped roasted unsalted peanuts.

Vietnamese Dipping Sauces

In a bowl, mix together 2 tablespoons fish sauce, 2 tablespoons cold water, 2-4 tablespoons chopped fresh coriander leaves, 1 teaspoon red chilli and 1 teaspoon soft brown sugar(optional).
Generally, when sugar is used in this style of cooking, the best to use is fresh grated palm sugar if you can track some down


Our Favourite Dipping Sauce

combine:
1 tablespoon Fish Sauce
4-6 tablespoons Soy Sauce
-the lighter kikoman style soy is best here.
1/2 cup chopped Coriander Leaves
1/2-1 teaspoon Sambal Oelek
