Greek Lamb

Ingredients:
1 leg of lamb - preferably boned
potatoes, peeled and cut into pieces
1 cup lemon juice (squeezed fresh is best)
Oregano
Olive oil
Salt
Black pepper (freshly ground)
1 and a half litre water

Marinate lamb in lemon juice and oregano for 12-24 hrs.
Place lamb in deep ovenproof pan
Cover with leftover marinade, top up with more lemon juice, oregano and cover with water
Cover with foil and bake at 250 C for 2 hour
Add potatoes around the lamb, adjust liquid level if required.
Cover in foil once more and bake
