Syrian Cheese and Mint Bread

I use a bread machine to mix and proove this bread.
I also use Laucke Bread Pre-mix flours.
You will need to interpret the recipe for other methods and flours.

Ingredients:
400ml water
275g rye bread mix
300g white bread mix
1 and a half teaspoons yeast

handful chopped mint leaves
cup grated parmesan or any other sharp cheese

After mixing, kneading and prooving the bread dough, knead in the mint and cheese, adjusting the dough firmness with more white flour if required, A fairly firm dough is needed.

For Plait:
Divide into three equal quantities, and roll each out into 50cm long braids. Plait the three and shape into a circle.
Transfer onto a large pizza tray.
Cover and leave in a warm place for about an hour - until doubled in size.
Glaze with beaten egg. Sprinkle with poppy seeds, or sesame seeds if desired. Bake in 200c oven for 25-30 minutes.
